Noticing the scarcity of quality cheeses available, Iain Mellis decided to reacquaint the citizens of Edinburgh with the significant difference in flavour between farmhouse cheese and that mass-produced in a factory. I. J. Mellis quickly became a success and now boasts of providing the most delicious variety of unpasteurised cheeses.
